My name is Rubens Paolo Canonico. I was born and raised in Naples, Italy. I have been a master mozzarella cheese maker for over 20 years.

Since coming to the US, I have been hand-making fresh mozzarella for some of the top chefs in the world, such as Wolfgang Puck’s catering company when they catered the Oscars.
